Start the new year out right with this breakfast egg casserole!

Conni's Breakfast Casserole

 

Ingredients


one small onion, chopped

one red pepper, chopped

1/2 lb. asparagus, chopped

1T olive oil and 1T butter, melted (or use Fustini's butter flavored olive oil)

One 12 oz. package Aidells smoked chicken sausage (spicy mange with jalapeno)

1 cup shredded cheddar cheese or one package crumbled goat cheese

12 eggs

1 cup skim milk

salt & pepper


Directions 


Saute vegetables in olive oil/butter until onions are translucent.

Transfer to a 9x13 glass pan that has been sprayed with Pam or butter.

Cut up Aidell's sausages and spread over the vegetables, then sprinkle with cheese.

Wisk the eggs, milk, salt & pepper together and pour over the sausage/vegetables.

Bake at 350 degrees for one hour.
